School of Trends & Gastronomy

The culinary institute ‘School of Trends & Gastronomy’ has a wide range of events planned for 2017 - events where sustainability, community and the art of taste is at the centre of everything.

FOOD ON THE TRIP – THE HAMMEL ROUND TRIP IN THE ‘40S

Join us on a gastronomic time travel back to a Danish railway restaurant in the 1940s. The iconic waiting room at the station on the Aarhus-Hammel line will set the scene for an authentic historical food experience, where traditional Danish cuisine is on the menu. The beautiful room will be elegantly decorated in a formal dining style befitting the era of fine foods in fabulous spaces. The menu and service minded waiters will ensure that the ‘travelling’ guests have a magical experience as they journey back to the era of the 1940s.

THE BOTTOM OF THE FRIDGE
Instead of throwing ugly vegetables and fruits, day-old bread and grain out, cook it! Participants are invited to hand in the surplus of their fridge in the morning before going to work or the lecture hall. At the end of the day everyone will meet up at Aarhus Tech, in the college canteen, and enjoy a social event including a meal made up from produce that would otherwise have been discarded.

DINNER FROM NATURE’S PRODUCE
This event ensures that the participants learn about the edible produce that exists in the wild, in the forest and by the beach and gain experience about how these edibles can be cooked and be a vital part of a meal.

SERVE A SAUSAGE WITH FEELING
To produce a gourmet sausage does not require large and fancy equipment – quite the opposite actually! The equipmentis of lesser importance; it is the produce within the sausage that counts. Participants get a starter kit containing meat, basic spices, intestines, and equipment and learn to stuff their own gourmet sausage.

THINGS TO TASTE BEFORE YOU DIE
A flavour festival in which the participants will have the opportunity to taste a wide range of produce and dishes that have been forgotten or are unknown by many. We will divide the event into different flavour groups and tasting experiences – beach and forest – local Danish cuisine- Nordic specialities – ethnic dishes.

FROM HATE FOOD TO FAVOURITE FOOD
Young participants inform the college about dishes and produce they can’t and don’t want to eat. Perhaps they have a really good story about this. We will cook one or more dishes of these ‘hate foods’. The participants will then return to the college with a friend or two and taste the ‘new dish’ and learn to love another flavour from an old foe.

THE SURPLUS OF THE GARDEN
Put those surplus garden fruits, berries and vegetables to good use. Garden owners and harvesters can hand in their extra fruits, vegetables and berries in the morning along with jam jars corresponding to the amount of produce handed in. Later that day, canned, pickled and fermented products can be picked up and tasted.

DINNER IN THE DARK
Smell, sense and experience a truly unique sensory dining event. Participants will enjoy a meal in a completely dark restaurant. With the visual capacity removed, you experience what happens when food is enjoyed by using all your other senses such as the tasting palate, the sense of smell, and the feeling of food textures. Diners will be challenged and surprised as they explore their dinners in the dark.
